Both measure film thickness, and 100 gauge equals 1 mil. Stretch film is quoted in gauge, so an 80-gauge roll is 0.8 mil. Sheeting, tubing, and VCI are quoted in mil. One mil is one thousandth of an inch. When you compare two films priced per roll, check that you're comparing the same measure, because 6 mil sheeting is more than seven times the thickness of 80-gauge stretch film.

VCI, in whatever format, matches how the part ships. Use VCI bags for individual parts, VCI paper to wrap or interleave a stack, VCI film to cover something too large to bag, and VCI tubing when you want to cut your own length. Standard stretch film and sheeting keep water off but do nothing about the oxidation already starting on the surface.
